November Recipe: Sweet Potato Casserole

Ingredients

3 Cups mashed sweet potatoes

1 Cup of sugar

2 eggs

1 tsp. Vanilla

1/3 Cup of milk

1/2 Cup of margarine

Topping Ingredients

1 Cup firmly packed brown sugar

1/3 Cup of all-purpose flour

1/3 Cup of margarine

1 Cup of chopped pecans

Directions

Combine potatoes, sugar, eggs, vanilla, milk, and margarine.  Beat with mixer until smooth.  Spoon into greased 2 quart casserole pan.

Topping: Combine brown sugar, flour, butter, and pecans.  Sprinkle on top of casserole.  Bake in 350 degree oven for 30 minutes.
